French onion soup with cider

Oysters cooked in cider

  • crème fraiche
  • cider
  • butter
  • salt
  • seaweed


Open the oysters, keep the shells on an oven dish, put the oysters in a small pan, reduce the cider to a syrup add a little oyster juice, at the end add the butter and crème fraiche, at the same time heat the shells, cook the apple and mushroom together in butter, heat the oysters until they are simmering, fill the shells with the apples and mushrooms and put oysters on top, serve on a bed of seaweed and finish with the sauce.
